TR0UBADOUR BREAD & LE DINNER x J0SHUA LANNING

On Saturday, March 23rd, our friend & former sous chef SingleThread: Joshua Lanning will be joining in the kitchen for a collaboration for one night only!

They will be cooking with fire at its best is not merely an expression of primal heat, intoxicating wood smoke, and juicy unctuousness. It is also the embodiment of heart, soul, and boundless family love. It is the true touchstone for Joshua, whose formidable career has included time at legendary Noma in Copenhagen; sous chef at Michelin three-starred SingleThread in Healdsburg, California; and culinary director for Chef Sean Brock in Nashville. Chef Joshua Lanning has been impacting the culinary and social scene in his hometown of Peoria. Joshua is not merely trading haute tweezers for well-worn tongs. Rather, he is answering his calling, and arguably, his destiny.

Herb Salad | Baby gem, black sesame, smoked great lakes walleye, Illinois wild plum

Sean started this idea with the intention to not only collaborate on something special with his band of industry friends, but to connect again with these comrades and to bring something deeply meaningful to our community.

While these chefs may not live in Healdsburg anymore, something always draws them back. We are delighted to host them at Troubadour where they bring something special from their now homesteads.
